INSTANT POT GROUND TURKEY STUFFED PEPPERS
INGREDIENTS:
Ground Turkey (or ground beef)
Packet of Taco seasoning
Garlic Salt
1/4-1/2 salsa
1/2 bread crumbs (italian or unseasoned)
1 White onion
1 bushel green onions
3-6 garlic cloves (to your liking)
COOKING:
1. Set Trivet that came with your instant pot in the IP, add 1 cup of water
2. Mix Onion, Green onion, ground turkey, taco seasoning, garlic, garlic salt, salsa and bread crumbs in a separate dish.
3. Flip the bell peppers over and poke a hole in the bottom of each of them (I did all 4 "points") with a toothpick to allow for drainage of any fat.
4. Using a spoon or your hands, stuff the ground turkey mixture into the bellpeppers. Leave a bit of room for expansion- More room if you want to add salsa and/or cheese
5. Once they are stuffed, set your bell peppers in the pot on the trivet. I covered the top of each pepper with about 1-2 tablespoons of salsa
6. Set IP lid and seal (don't forget to make sure you have your sealing ring in!)
7. Hit the Manual button (or on newer models, the "PRESSURE" button) and MAKE SURE YOUR VENT IS CLOSED!!!!!!
8. Cook on High for 8 minutes (I DID cook them for 15 minutes and the bell peppers were much softer than I wanted them to be) and NPR for 2-3 MINUTES (I DID NPR for 5 in this video, but I think I'd try 2-3 minute)
9. After the 2-3 minutes, release the steam valve with anything but your hand!
10. Optional: If you want to add cheese and broil, its easiest to just remove the whole trivet, set on a cookie sheet and put under the broiler for ~5 minutes.
