Instant Pot- One Pot Pork Chops, Potatoes & Veggies- VIDEO INCLUDED!

The other night I had some Pork chops to cook but I didn't want to fry them up like I usually do on the stove.  I decided to do a quick search on the Instant Pot app and found a delicious pork chop recipe that I modified to add in some potatoes and Veggies (and onions for flavor). I modified mine a bit so I will post my modified version below, you can find the original recipe here: Instant Pot Pork Chops with a Creamy Garlic Sauce INGREDIENTS 1. 2 Tbsp Olive Oil 2. 2 Pork chops 3. Lawrys seasoning, Garlic Seasoning and Pepper 4. One cup Beef Broth 5. Five Garlic Cloves chopped 6. 1/2 cup Whole Milk 7. Yellow and Red potatoes- three each, quartered 8. Brussels sprouts, halved (about 15 whole ones) 9. Whole chopped white onion MAKING THE MEAL 1. Add oil and press Saute on your instant pot 2. Instant Pot Mashed Potatoes- VIDEO INCLUDED

That last post got a little long, so I thought I'd put the mashed potatoes all on their own post! Mashed Potato Ingredients: -4-12 potatoes -1/2 cup butter -1 container of chive and onion cream cheese -1-3 garlic cloves -1.5 cups of water Seasoning Mix: -1 Teaspoon garlic salt -1 Teaspoon seasoning salt -1/2 Teaspoon Pepper Putting it all together:  1. Rinse Potatoes and place them inside the Instant Pot 2. Add 1.5 cups of water to the Instant Pot 3. Sprinkle Seasoning mix on top 4. Turn on Instant pot and press Manual, set timer for 20 minutes (If I'm doing more than 6 potatoes I bump my time up to 25-28 minutes depending on amount and size of potatoes) 5. Allow NPR (Natural Pressure release) for 5-10 minutes 6. Using hot mitts, remove inner pot and carefully dump water from Instant pot into the sink 7. Use a hand masher (no need for a blender unless you REALLY want one!) to mash potatoes 8. Dump in butter, garlic and cream cheese.  Replace IP lid and le...

Instant Pot Ground Turkey Stuffed Peppers (INCLUDES VIDEO!!!)

INSTANT POT GROUND TURKEY STUFFED PEPPERS INGREDIENTS: Ground Turkey (or ground beef) Packet of Taco seasoning Garlic Salt 1/4-1/2 salsa 1/2 bread crumbs (italian or unseasoned) 1 White onion 1 bushel green onions 3-6 garlic cloves (to your liking) COOKING: 1. Set Trivet that came with your instant pot in the IP, add 1 cup of water 2. Mix Onion, Green onion, ground turkey, taco seasoning, garlic, garlic salt, salsa and bread crumbs in a separate dish. 3. Flip the bell peppers over and poke a hole in the bottom of each of them (I did all 4 "points") with a toothpick to allow for drainage of any fat. 4. Using a spoon or your hands, stuff the ground turkey mixture into the bellpeppers.  Leave a bit of room for expansion- More room if you want to add salsa and/or cheese 5. Instant Pot meal Videos-all on one blog post!

In the meantime, if you intend to purchase an Instant Pot , it might be helpful to watch one of these videos I've made to see how this pressure cooker works!  Mine sat in the box for months because I was intimated by it, and I quite honestly didn't understand the directions.  I'm a visual learner and I needed someone to SHOW me how to use it.  Thankfully, I had a good friend who brought her pot over and we cooked together, so I got a hands on lesson. Here's a quick video of some macaroni and cheese I made the other day. It's a hit! Great "first timer" recipe to try AFTER you do the water test! Instant Pot Mac & Cheese (Video Included!!!)

I've decided I'm going to try and video at least one meal a week made with the Instant Pot , and post it here on the blog. Why?  Because I think this wonderful ol pot can be really intimating the first few times you use it. Mine sat in the box for 6 months. SIX. MONTHS.  So, no judgment here about that.  I only took it out because my friend Karisa came over and cooked with me- taught me the ins and outs.  After that, Once I got the hang of it, I was using it 2-4 times a week and went on to buy an 8qt instant pot (started with the 6qt).  It's really nice to have both, one because we're a family of 7.  But also because I can complete an entire meal (meat, veggies, potatoes of some sort) at one time and it's all done and ready to serve at once. Instant Pot Meal- A VIDEO

I've had a number of people ask me to make a video of a meal in the Instant Pot , so here it is!!! Chili Lime Chicken - Shredded and great for Tacos or those summer salads! This is a GREAT recipe for a new/newer/still slightly intimidated instant pot user (I know they can be intimidating, mine sat in the box for 6 months until a friend came over and showed me how to use it by bringing hers and cooking with me!).
