I'm in love with the Instant Pot!

I thought I'd just jump right into this blogging thing and really talk about a product I'm MADLY in love with.  So much so, that after I finally got the hang of how the heck this thing works, I purchased a second one.  I'm now the proud owner of both a 6qt instant pot and an 8qt Instant Pot.

About a year ago I purchased an Instant Pot, I had no idea how to use it and I'll be honest, this sucker sat in the box for about 6 months.  I was intimidated and scared of it.  God bless my girlfriend who insisted on making a mom's date out of it, and came over to teach my mom and I how to use this fancy pancy thingy.

Once I started using it, I simply could not stop.

Things to know:
1. There IS a learning curve, but a few uses will render you a PRO!
2. Once you get the hang of it, the cooking for *most* meals is faster
3. The "set it and forget it" feature is priceless with ALL THE CHILDREN, NEEDING ALL THE THINGS which always happens the very MOMENT you set out to start cooking
4. I highly recommended you reach out/link up with someone who has an instant pot so they can walk you through a really easy basic first meal, and/or meet up with you to do some cooking together.

Stay posted for my blog post about some of my favorite meals and must have instant pot accessories!

I try and pull them out the night before to defrost a bit in the fridge.  If I don't, 2-3 minutes on defrost is all I need to warm them up.  If they are completely defrosted, I usually do 45 seconds in the microwave. HOW DO YOU MAKE THESE DELICIOUS EGG BITES YOU ASK?? Ingredients:  12 eggs beaten 1 package bacon, cut and cooked on stove Green onion Shredded Cheese Directions: 1.
